Tony, there's a place I saw last year just outside of Fergus I believe that
seemed to have a lot. Our landscaper said the name of the place was Ivar's (or
Ivans?) and they had a big selection. I've been meaning to check it out since I
want to create a carved rock water fountain myself.

Sorry I don't have more details but it may give you a lead.

There is also a new place, haven't checked it out myself, at the corner of
Benjamin Road and Weber.

The only place I've been two that has good rock is Harper's in Ancaster. We
picked out some great coloured nature flagstone like rock for my sister's garden
there.
